Bowl wise, we are now 9-9 all time. Some of those I was not around for - The first SDSU Bowl that I was aware of was the Pasadena Bowl of 69.
Given that our bowl record is not exactly stellar, todays game rates some consideration for a "best" game. Here is my top 5 in descending order:
5) New Mexico Bowl 2019: This one makes the list because of the margin of victory and because it was so damned unexpected. Seriously, who saw THAT coming???
4) Tater Bowl 2013: Man, it was cold in Boise that day - but fun. I had no idea who Buffalo was, but I had heard of Khalil Mack. We crushed him and the rest of those guys that day. I still remember the Buffalo CB's trying to avoid getting smashed by Chad Young on his lead blocks. Special shout out to our Monty of that season. He was out there for the whole damned game in just a loin cloth...respect!
3) Holiday Bowl 1986: Simply a great game - though a heart crusher. If you are not familiar, watch it on you tube. To this day, I can meet some Iowa Hawkeye alum and THEY will want to talk about how it was to be at that game. I've never experienced another sporting event in person that gave me the highs and lows of this one. Santos, Awalt...Wow.
2) Poinsettia Bowl 2010: Brady's 2nd year and the turn of fortune for the program was happening. In our first bowl in 12 years, we stomped a very good Navy team and Lindley, Hillman and the boys started the string of bowl games that has been unbroken since then.
1) Las Vegas 2016: The best of our bowl games (IMHO). Just us on TV at game time, Brent Musburger on the call and a resounding win. You HAVE to remember this one: Houston came out on fire and were up by 2 scores before we were even in our seats. It was looking bad. But the staff and team made some incredible in-game adjustments and the Cougs didn't score again. Pumphrey scored a TD and then grabbed the title of all-time NCAA rushing leader and the game was ours. What was not to like?
Honorable mention to the Louisiana Bowl, but only because the officials needed to actually INVENT a penalty ("illegal stemming") to beat us after a great comeback by Lindley and friends.
What does your list look like?

Good list. I agree on 2016 Game. Still don't know what stemming is. I met a kid that was on the opposing team a couple of weeks ago. He works in Aztec Ticket office ( seems like a really nice guy). He seemed pretty sheepish about stemming call.

let me add two games. 1) the 2010 poinsettia bowl win over navy in a game that almost wasn't played because of flooding at the stadium. About 7 inches of rain or more fell in four days causing county wide flooding and first bowl game in 12 years and start of the 10 year consecutive bowl streak. 2) the beatdown of Cincinnati 42-7 at the Hawaii bowl in 2015 must be on the top 5 list. no disrespect to group of five teams but the AZTECS have earned a bowl game against a power 5 team.

OP: I like you list with 2 minor revisions...Hawaii Bowl win replaces the Tater Bowl...Flip Holiday & Poinsettia. Holiday Bowl was epic and would clearly be #1 except for one small detail.

For me:
1. LV Bowl 2016 2. Hawaii Bowl 2015 3. Poinsettia Bowl 2010 4. NM Bowl 2019 5. Potato bowl 2013
I’ve been a fan since 1996 so any bowl before that was before my time. I’m still mad we didn’t get a bowl game in 96.

A lot of good choices, but I have special memories of the Pasadena Bowl in 1969. We were undefeated, playing in our first Division 1 bowl game, ranked in the top 20, Dennis Shaw was the QB, Coryell was the coach. I've mentioned many times before, it was the first game we took our son to, and he's sill going to all the football and basketball games with me. So that game will always be special.
Another formal bowl game that he old timers will recall was the Carnation Bowl in 1972. It was a "formal bowl" but now an official bowl. We were 9-1 with the only loss to Houston in the Astrodome. Fans were upset that we weren't going to get a bowl bid. One of the morning disc jockeys on KFMB started promoting the idea of making our own formal bowl against our final opponent that year, Iowa State.
The town really got behind the idea. It turned into a real formal bowl. Fans were encouraged to wear their formal attire. Formal gowns or cocktail dresses for the women and tuxes for the men. The formal wear shops in town were all offering very special deals on rentals for the night of the game.
It was amazing to see the percentage of the crowd that did dress in formal wear for that game. That was the only time in his life that my did wore a tux.
It was a special evening in Aztec Football history. To top it off we did win the game against what was a big time opponent.

Gotta go with the Poinsettia Bowl in 2010 because it was before the home fans. That's No. 1.
2) Hawaii Bowl 3) Vegas Bowl 4) Holiday Bowl 5) Tater Bowl
